Apple Cinnamon Streusel Muffins

Ingredients

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1/2 cup milk
1/4 cup vegetable oil
1 cup grated apple

Streusel Topping

1/4 cup flour
2 tablespoons brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter

Streusel Directions

Combine flour, brown sugar, and cinnamon in a small mixing bowl.

Cut in butter with a pastry blender until well mixed and crumbly.

Sprinkle over muffins before baking.

Preheat oven to 400 degrees.

In a large mixing bowl, combine the dry ingredients. Make a well in the center and set aside.

In a medium mixing bowl, beat the egg, milk, and oil. Stir in apple.

Add liquid mixture to the well of the dry ingredients, stirring just until moistened. Batter will be slightly lumpy.
